A staple of the Scottish diet at this time of year is mince and potatoes. But I don't really like mince and tatties so I decided to make my own version of this warming comfort food.
As with most meals I cook, this one is quick, easy to make and filling.
New potatoes (amount is dependant on how hungry you are)
Sugar snap peas
Quorn mince (you can use beef mince if you prefer, I would suggest 125g)
Oxo beef stock cube
Coconut Frylight spray
Start by washing the potatoes and keep the skins on. Prick each potato with a fork and put in a microwave bowl. Cook for 6-8 minutes depending on how many you're cooking. While the potatoes are cooking, start to make your mince. Chop the pepper and fry using the coconut Frylight. Once the pepper is soft, add the mince to the pan (I often use frozen Quorn mince if I'm cooking for myself as you can portion this out a lot easier.). Then add an Oxo cube, some spice (I used paprika) and a bit of boiling water. Simmer until the liquid has thickened into a gravy.
When the potatoes are finished cooking take them out the microwave and cut each one in half. In a separate pan heat up some of the coconut Frylight and fry the sugar snap peas for a minute. Add the potatoes and fry until the skin is crispy.
